This salad is fast, flavorful, and fresh! It really is summer in a bowl, filled with everything at the peak of perfection - grilled chicken, juicy blueberries, sweet corn, and a lovely lemon zest dressing. It's so good you won't believe its actually good for you!
I love that you can make this salad either a small side dish, or you can double the amount, add some grilled chicken or shrimp, and voila! You have dinner! The combination of strawberries, almonds and real parmesan cheese with a balsamic dressing is just so dang good!
While this salad seems like it has a huge list of ingredients, it comes together really quickly. I know it doesn't really look all that impressive - just some lettuce, beef and mango. Totally ignore the fact that this salad has the word "Spring" in it. This salad is jam packed with produce (beets, carrots & asparagus), plus juicy ripe pears and a lovely lemon vinaigrette! It takes a bit of work to get it all put together, but its so delicious once you get it on the table that you won't mind!
