I think almost everyone will agree with me that one of the best things about summer is the vast quantity (and quality!) of awesome produce! And one of the best ways to use up all this produce is in a big delicious salad! Dinner salads have become one of our favorite things! Not only can you pack tons of fruits and veggies into your diet, but they are also quick to pull together and require minimal cooking time. Which is always good when its blazingly hot outside! I've rounded 9 of my very BEST salad recipes for you guys to peruse, try, and love! Happy Eating!

I love thai food because it is so full of awesome flavor, coming straight at you. And this salad is no exception! Its full of awesome veggies, chicken, and a homemade flavor packed peanut dressing! You can't go wrong here!

This salad is perfect for when its hot out! You don't want to spend forever cooking, and you don't want to eat a ton, either! This salad is quick to pull together, full of flavor, and delicious! A quick sear on a flank steak on the grill while you chop and mix the dressing and you are ready to go! Its perfect!

This salad is fast, flavorful, and fresh! It really is summer in a bowl, filled with everything at the peak of perfection - grilled chicken, juicy blueberries, sweet corn, and a lovely lemon zest dressing. It's so good you won't believe its actually good for you!

I love that you can make this salad either a small side dish, or you can double the amount,  add some grilled chicken or shrimp, and voila! You have dinner! The combination of strawberries, almonds and real parmesan cheese with a balsamic dressing is just so dang good!

While this salad seems like it has a huge list of ingredients, it comes together really quickly. I know it doesn't really look all that impressive - just some lettuce, beef and mango. But the flavors hidden inside here are awesome! Ginger, Garlic, Mint, Cilantro, Green Onions, Mango, and Peanut Butter! Seriously. Seriously.

Making the home made bbq sauce dressing ahead of time not only saves time at dinner time, but it gives you this awesome bbq sauce you can slather on practically anything (and you will want to!). But pair it up with grilled chicken, sweet corn, and cilantro and you have a lovely a lovely salad that will keep you full and want you to eat more!

This salad is packed full of summer produce! It comes together super quick, too! And you won't even notice the fact that it is vegetarian, you will be too busy enjoying it! I wish I knew what more to say about this salad than "GAH! Its sooooooo goooood!"

Totally ignore the fact that this salad has the word "Spring" in it. This salad is jam packed with produce (beets, carrots & asparagus), plus juicy ripe pears and a lovely lemon vinaigrette! It takes a bit of work to get it all put together, but its so delicious once you get it on the table that you won't mind!
