Normally I don't like to fill my kitchen with a ton of single use items. There just isn't enough room in my kitchen to house all the cute little do-dads and what-nots. But one thing I have been secretly wanting for a while now is a donut pan. I mean, a baked donut isn't really that much different than a muffin, right? With a tiny bit of frosting on top... and maybe some sprinkles... So imagine my excitement when I got one for Christmas!
Ladybug and I had a lot of fun making these one morning while Munchkin napped (we are now working on her napping in her crib in Ladybug's room instead of in the bassinet beside our bed). They were super easy and fast to make, and SO dang delicious to eat! It did take me a bit to get the hang of the pan (I filled some way too full, and then they didn't look a thing like a donut) but they were just as delicious! I definitely recommend making these!
Banana Chocolate Chip Mini Donuts with Peanut Butter Icing

Ingredients (2 dozen)
- 3/4 cup flour
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup sugar
- 1 egg
- 1 medium mashed banana (about 1/2 cup)
- 1/4 cup veggie oil
- 1 tsp vanilla
- 1/2 cup mini chocolate chips
- 2 TBSP creamy peanut butter
- 1/2 cup powdered sugar
- 1-2 TBSP milk
Preheat oven to 350 F.
Coat donut pan with cooking spray and set aside.
In a small bowl whisk together the flour, baking powder, cinnamon, and salt.
In a medium bowl whisk together the sugar, egg, mashed banana, vegetable oil and vanilla.
Gently stir in the dry ingredients until there are no lumps.
Stir in the chocolate chips.
Carefully spoon the batter into the pan, filling each donut hole about 3/4 full. Wipe any excess batter that got on the little column in the middle (that creates the hole in the donut).
Bake for 7-9 minutes, or until donuts are slightly browned.
Cool and then remove from pan.
Place a sheet of wax paper under a cooling rack.
In a small bowl whisk together the peanut butter, powdered sugar and enough milk to get the desired consistency.
Dip each donut into the icing and then transfer to a wire rack.
