A while back Joel and I got the rare opportunity to go to a dinner party. We still do our weekly Sunday night potluck dinner with friends who have become family here, but rarely do we spend time with anyone else. It was so wonderful to be able to get out, and visit a lovely family in the country (with a gorgeous log cabin home, I might add!) I love making new friends, and I hope that these people will quickly be on our "friends" list! Rarely does a dinner at someone's home (especially the first time you have spent time together) seem so effortless and comfortable. We really enjoyed our time (and our food) there! The kiddos enjoyed their time there, too (Well, at least I think Munchkin did, she slept the whole time), and we enjoyed a lovely evening by the fire pit, too. We ended up staying way past bedtime, but it was totally worth it!
This makes a perfect comfy fall dish. It's not screaming pumpkin spice at you. The combination of sweet apples, tart cranberries and crunchy walnut topping is perfect. This is great warm with a bowl of ice cream, on top of some yogurt, or even just a big plate of it. Four adults did a pretty good number on it, and there was just enough for two more servings when we got home. I definitely love this flavor combination, and it is so easy to throw together, I might just go make another batch right now!
Apple Cranberry Crisp with a Crispy Walnut Topping
Prep Time: 15 minutes
Cook Time: 60 minutes

Ingredients (6-8 servings)
- 2.5 pounds sweet/firm apples, peeled, cored and diced into 1/2" pieces (I always like to get a combination of varieties of apples).
- 12 ounces fresh or frozen cranberries
- 1/2 cup sugar
- 3 TBSP flour
- 1 tsp vanilla extract
- 1/4 tsp orange zest
- 1 TBSP fresh orange juice
- 6 TBSP butter, cut into small pieces
- 2/3 cup flour
- 2/3 cup old fashioned oats
- 3/4 cup lightly packed brown sugar
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 1/2 cup chopped walnuts
Preheat the oven to 375F.
Butter a 9x13 baking dish.
In a large bowl, combine the apples, cranberries, sugar, flour, vanilla and orange zest and juice.
Transfer to the baking dish.
In a medium bowl, combine together the ingredients for the crisp topping with a fork or your fingers until it forms course crumbles and the butter is mostly evenly distributed.
Sprinkle the crisp topping over the apple/cranberry mixture.
bake 55-60 minutes, or until the topping is browned and the juices are thick and bubbling.
Let cool 15 minutes before serving.
